Dinner at Le Viole near Parma, Italy

Le Viole

A delightful restaurant run by two sisters. The food is delicious and innovative. The most expensive course was 10 euro’s. An excellent restaurant with very reasonable prices that is listed both in Guide Michelin as well as the Slow Food Osteria guide.

Gutturnio is a Barbera and usually Bonardo blend from the foothills above Piacenza. Although not a natural wine, it was quite good and a good value.

Organic wine – read "we decided not to spend money on chemicals" and found that they had the same yields with less cost.

Duck salad. Light balsamic and citrus dressing. Ultra fresh salad greens.

Sourdough bread made in house. Absolutely delicious.

Pumpkin and potato gnocchi with speck and carmelized onions.

Muskaleti di maiale con piccolo verdure. The meat is cooked a longtime. Typical brassato over 5 hours. The brunoise of carrots, celery, onions, peppers are cooked quickly and separately. They are then added just before serving. The vegetables add a needed contrast to wintery dish. . The side vegetables have a bit of mustard oil or essense added.
